The finely rolled leaves have an intense scent of exotic flowers and sweets. This High Mountain Oolong (also known as Gaoshan) produces a silky, smooth mouth feel and a long, sweet aftertaste. It is an elegant tea from the Lishan mountains in Taiwan (which reach up to 2500 meter and are often hidden in fog). Plucking is done only twice a year. The great variations in temperature and the pure, rich soil make Lishan a superior tea.
The origin
The estates with tea plants of the Chin-shin variety grow peacefully at a cool, foggy altitude, high up in the central mountain area in the far-Eastern part of Taichung province. Lishan Oolong is a High Mountain tea, originating from the highest tea-producing mountains in the world. Since there are only one or two harvests in a year, the plant gets the opportunity to develop its delicate flavours. The great differences in temperature between day and night, as well as the rich soil, further contribute to this. Tea Master Joyce supervises the traditional processing of the hand-picked tea leaves. After a period of withering, first outside then inside, the leaves get their typical ball shape by being rolled in a machine for hours. Finally these little balls are being heated and dried.
