Taiwan Tippy Green Tea

Tippy Green is a refreshing, vegetal, but, above all, amazingly sweet tea. The aftertaste is long-lasting and sweet-spicy.  The mouth feel is smooth and full. Its maritime flavours give you a feeling of looking out over the sea. The deep umami taste presents itself strongly in a concentrated, soft infusion. Whiffs of citrus can also be detected. Even if made at a temperature of 80 or 90 degrees, this clear, yellow-greenish tea remains aromatic. A complex tea from Sanxia, with many surprises in subsequent infusions.

The origin

Tippy Green Tea

This green tea finds its origin in the Sanxia region in the Northern province of Taipei. The area, at about one hour’s drive from Taipei city, is hilly and has a rich vegetation. The Chin-shin variety tea plants grow at 300-400 meter altitude and are being harvested throughout the year. This tea is turned into three different products. First, there is the Long-Jing type, with its flattened leaves. Secondly, the Pi Lo Chun type with leaves that have been twisted, resulting in their curly shape. Our Tippy Green is the second type, which, after being plucked by hand, is immediately roasted in order to stop oxidation (also known as ‘killing green’). During the rolling of the leaf the tea then acquires its twisted and curly shape. Two phases of drying complete the process, closely supervised by Tea Master Lee.
